- 1/2 cup Marinara Sauce
- 1/2 Zucchini
- 1 Bell Pepper (any color)
- 1 cup Corn (canned, frozen, on the cob)
- 1 cup Mozzarella Cheese (shredded)
- 6 Medium Tortillas (6")
These are just an example. Customize these for your enjoyment!
½ cup marinara sauce
1 Bell Pepper (any color)
1 cup corn (canned or on the cob)
1 cup mozzarella cheese
6 Tortillas (wheat or corn)
Optional garnish: green onions, sea salt, cilantro
Dice all of the vegetables into thumb-nail size pieces
If using corn on the cob, roast the corn first on a grill or heat in the microwave if that is all that is available
Sauté all veggies in a skillet with olive oil
Toast the tortilla directly on the stove top or barbeque grill
Assemble the pizza in this order:
Tortilla – place on a baking sheet
Apply your favorite marinara like pizza sauce – spread in a circular motion to cover the tortilla
Spread out the vegetables on top of the sauce
Add cheese (lots of cheese)
Cook in the oven using the broil setting. This shouldn’t take more than five minutes (depends on how hot your oven gets). I monitor it and remove when I see the cheese start to boil and get a little golden. Cooked to perfection!
Cut into slices and add garnish. For this entry I used arugula and drizzled with reduced balsamic vinegar.
