This tasty treat makes a great side to just about any dish. No, they don’t taste just like fried French fries! Personally I can’t eat those all the time because they make me feel guilty. Instead I make these. They taste great and are easy to make. The secret is to let them soak in cold water for at least an hour before you cook them. That’s how they get crispy. What I do is rinse them in a strainer first, then let them soak. After they soak I dry them on a paper towel. This only takes a few minutes (roll them around a bit). After that I toss them with a little extra virgin olive oil, salt, and pepper. For cooking I place them on a Silpat and broil them in the oven for about 15 minutes. They are done when they are golden. So keep an eye on them.
