  • 4 slices Sliced Bread
  • 1/2 Onion
  • about four tablespoons Fig Spread
  • 3 ounces Goat Cheese
  • Salt & Pepper
  • about six figs Sliced Figs
  • about 4 ounces Colby Jack or Cheddar Cheese (shredded)
  • about two ounces Marinara
  • 1 Avocado
  • as garnish Red Onion




Breakfast is my favorite meal of the day. If I am at a restaurant and breakfast is still available, I feel compelled to order it. I like to include breakfast elements into my cooking whenever possible because even when no one is serving breakfast, I still want to eat it. I could have called this recipe an open-faced sandwich, but it didn’t feel like a sandwich to me. It felt like “dinner toast.”


This recipe and pictures are from an actual dinner that I prepared for my family.   The first one that I will talk about is the goat cheese and fig-caramelized onions.   I live in Anchorage, Alaska and in the summer when you walk down 4th Avenue, you cannot help to notice that the whole place smells like delicious food. Specifically what you smell is the dozen Reindeer Sausage hotdog carts that are scattered in the area. Google it. It’s very popular here. I mention this because all of the carts have caramelized onions as a condiment for the hot dogs. They sauté them right next to the hot dogs in a larger frying pan. They use simple ingredients – salt, pepper, butter and some Coca Cola. Since I think that the smell of these onions is so delicious, I was inspired to incorporate my own version for my dinner toast.



A favorite sandwich of mine – the avocado melt, I’ll admit, inspires the other recipe. You’ll typically eat a sandwich for lunch, but as I mentioned, I really like breakfast and, well, it happens to be dinnertime. I didn’t use mayonnaise for the base as is typical with an avocado melt because the base I did use, marinara, felt more like a dinner ingredient. I make up these weird rules because I want to think that I am somewhat of a civilized person. Yes, my dinner omelet is way different than my breakfast omelet and have you seen my dinner waffle?

Dinner Toast Ingredients



  • Toast your desired amount of sliced bread. We eat two pieces each so this recipe will be for four pieces of toast


  • Begin sautéing your onions
    • Slice ½ of an onion
    • Place the onion in a frying pan on low heat with a teaspoon of oil
    • Add ½ cup of water
    • Add two tablespoons of fig spread
    • Dash of salt and pepper
    • Cook until the onions are translucent and the water has reduced away

  • Build the Avocado Dinner Toast
    • Pre-heat your oven to broil
    • Slice your avocado
    • Spread a thin layer of marinara on the toast
    • Place your avocado on the toast and top it with cheese
    • Place the assembled toast on the middle rack of the oven until the cheese has melted
    • Remove from the oven and garnish with fresh red onion

  • Building the Goat Cheese and Fig Dinner Toast
    • Pre-heat your oven to broil
    • Spread a thin layer of the fig spread
    • Place the sautéed onions, sliced fig, and goat cheese on the toast
    • Place on the middle rack of the oven until the goat cheese starts to collapse
    • Remove and add a couple turns of fresh black pepper
