  • 1 Fresh Baguette
  • Goat Cheese
  • Bell Pepper
  • Fresh Basil
  • Balsamic Vinegar
  • Olive Oil

This is a very easy and tasty recipe that is sure to impress your guests at your next dinner party. First slice a baguette and brush on a little bit of olive oil and toast one side. I do this in a pan but you can also broil in the oven. Then roast the pepper over the stove (if you has gas). If you don’t have gas your can barbeque it or just sauté it in a frying pan with a little olive oil. Don’t cook the pepper all the way through. Just enough to add a little more flavors yet still have a little crisp.

Lets talk about the balsamic vinegar. You have to reduce this. This is easy. I buy jug of normal balsamic vinegar from Costco to reduce. Pour some in a saucepan and let it softly boil for a while. The steam lets you know that the water is being removed. Occasionally stir with a metal spoon. After about 20 minutes dip the spoon in and see if it coats it. Another way to pour spoon full on a plate and let it cool. If it cools and maintains a consistency that you like then you’re done. If it’s to thick then just add more non-reduced balsamic vinegar. When it’s done I let it cool and pour it in a squeeze bottle.

  • First butter knife on a chunk of goat cheese
  • Then add a couple strips of bell pepper
  • A couple piece of fresh basil
  • Drizzle on the reduced balsamic vinegar
